I found an awesome recipe for creamy pesto chicken online. As a pesto lover, I figured I would give it a try as it had raving reviews online. It’s a simple recipe and only involves a few major ingredients. It’s super easy to make, its low carb, keto-friendly, and yummy! I included a side salad and sweet potato strings with mine. Other sides that pair well is cauliflower rice or vegetables.
Ingredients:
- 3-5 Chicken Breast (thin sliced works best, if you find thicker cuts, you can always tenderize them)
- 1/3 of Basil Pesto
- 8 ounces of softened cream cheese (you can use the reduced-fat version, it works just fine)
- 1 package of shredded mozzarella cheese
Instructions:
- Preheat oven to 375 degrees
- Lightly coat your pan with cooking or olive oil spray
- Place your chicken in the pan
- In a bowl, mix your cream cheese and basil pesto into a smooth constancy
- Cover chicken generously with cream cheese and pesto mix
- Cover generously with mozzarella cheese
- Bake for 30 minutes or until the internal temperature of the chicken is 165 degrees.
- Top with more shredded mozzarella.
